Boring technology, on purpose
Simple parts, connected loosely, tend to outlast clever ones. It is not exciting, but it works.
The point is not the format. It is that the friction is low enough to keep writing things down at all.
There is no lock-in and no loading spinner. A folder of files can be searched with tools that already exist on every machine.
The best setup is the one you do not have to think about. This one mostly gets out of the way.
